This series offers an overview of the Central Virginia local food system, beginning with an examination of our food heritage and the personal, community, and environmental aspects and benefits of “eating local.” Discussions then turn to accessing local foods, sourcing and shopping, creating direct relationships with farms, and the home economics of local food. Students also learn about cooking and menu planning season-by-season, with tips for home gardening and preserving the harvest. The focus will be on a plant-based diet. Field trips to Bellair Farm in Southern Albemarle County and to the Charlottesville City Market provide opportunities to see local Community Supported Agriculture (CSA) programs in action.
Instructor: Carroll Ann Friedmann is a local foods enthusiast and writer, founder of Virginia Friends of Farmers, and past board member of the Virginia Independent Consumers and Farmers Association. She holds a master’s of divinity from Princeton Seminary and has been studying and teaching religion for nearly 20 years. Each year she studies in India, to enhance her yoga teaching in the local community.
This course includes field trips to Bellair Farm CSA on Saturday, Sept 12 and to the Charlottesville City Market on Saturday, Oct 10, times TBA.
This course is offered by the School of Continuing & Professional Studies.
